„This is precisely where the infrastructural dimension of culinary art lies. Eating is an everyday activity; the enormous amount of labour involved tends to remain hidden when we prepare our meals. Yet culinary practices shape modes of production, supply chains, labour relations and environmental conditions. One could say that our stomachs create a specific foodscape – a landscape shaped by our eating habits and brought into being precisely through them. As such, our food is also closely linked to global forms of agricultural exploitation, monocultures and precarious working conditions.
